Ingredients

3 tbsp. Canola Oil

1 1/2 cup Onion

2 cloves Garlic

2 tsp Paprika

1 tsp Cumin

1/2 tsp. Pepper

1 tsp Salt

3 cups Chicken (we also use Tempeh)

1/2 cup cilantro

1 cup Jack Cheese

2 cup Cheddar Cheese

2 cups tomatillo  sauce

8 corn tortillas

1 1/2 cups sour cream

1/2 cup (can) chopped green chilies

Directions

Preheat oven to 350.  Saute onion, garlic and spices and chicken (or tempeh) Assemble casserole like a lasagna adding in the mixture, cheese, sauces and green chili to each layer.  We usually make about 3 layers.  Cook for 25 minutes and enjoy
